After centuries of sake brewing in Japan, the family began a new journey in Burgundy — exploring fermentation, terroir, and craftsmanship through wine.
Founded in Morey-Saint-Denis, Domaine Kuheiji reflects the meeting point of two fermentation cultures: Burgundy wine and Japanese sake.
Hirotaka Ito
Brewer & Winemaker
Hirotaka Ito, born in Aichi, Japan, joined Banjo Jozo in 1999 and spent more than fifteen years dedicated to sake brewing.
In 2013, he moved to Burgundy to begin a new challenge: creating wine while carrying the philosophy of Japanese fermentation.
Today, he leads Domaine Kuheiji in Morey-Saint-Denis, crafting wines that reflect both the terroir of Burgundy and the brewing heritage of Kuheiji.
